Bill carries a worn black plated Schofield with reddish stock grips. He probably acquired it during his time as a U.S. cavalry soldier, Schofields were made for the mounted troops. Another weapon that he brought with him from the Army was his Bolt Action rifle, that's his "newest" weapon (browned and iron bolt) and the one he uses most because in the infantry (someone pls correct me if I'm wrong) a soldier's primary weapon was a rifle.
Dutch carries a pair of silver and black plated Schofields engraved with gold and silver, both revolvers have pearl handles, and they also seem to be slightly worn.
A combination of fancy engravings and metallic finishes makes it the best looking gun in the game, half of the gun it's black (representing Dutch's dark side) and the other half is silver (Dutch's good side). The pearl grips represent his honor over the years.
When you unlock the Schofield at the doctor's office, Arthur picks up the gun and breaks it open to the side to see if there are any bullets. I just found out that a similar model worked like that, it's called the "Toolroom Prototype" and it was patented in 1874, Daniel Wesson made that model to solve some problems of the original Smith & Wesson No. 3
