1 in Chapter 4 with fully explored NA via glitches from back in the day, 1 in Chapter 6 - a continuation of the previous one but stopped before the last mission, 1 with 100% completion, 1 in Chapter 2 (replaying the game) and 1 with the Low Honor choices.

Like Aiden said it and I would also add the fact that you can push the cougar off only once, if it jumps again it's game over, no matter how much you mash the buttons. Of course Panthers have the same mechanics so all of the above goes for them as well. So definitely Big Cats are the most lethal ones.

If you use the cheat code for the race horse you can spawn John's horse from the rescue mission and it is a Flaxen Thoroughbred.

As tiny as the church is I don't think it relates to the shrunken head in Lakay. Some vodoo stuff that's for sure.
