I think it would be best to have the 3rd game explore the start of the gang and Jack's fate at the same time.
Assuming that the game will be larger than RDR2, dedicate a majority of the game to the gang's origins. The player would take control of a younger Arthur. This part of the game can take place in different regions (expanded West Elizabeth, more parts of Ambarino, etc). The origin story would end before Micah's arrival.
However, dedicate a part of it towards telling Jack's story. This would basically involve a massive time jump.
Jack's story can take place a couple months after Edgar Ross' death. At this point, Jack now has the option to cross over the Upper Montana River, and into the RDR2 map.
There would be some conflict regarding him being on the run. Killing the former chief of the FBI obviously won't be disregarded.
At some point, he would reunite with surviving gang members (Tilly, Pearson, Mary-Beth, etc).
Once the game is completed, there is an option to switch between Arthur and Jack.

This has always made the most sense to me since the game doesn't give much info about the river changing.
I'd also like to point out that connection between the two parts of the map still seems to be prevalent via the various ships that cross Flat Iron Lake. We see a riverboat in the first cutscene of the game. So even if no bridges were built to compensate for changes in the terrain, travelling on the water still seems to be possible.

I imagine RDR3 will be a similar case to RDR2's development where all subsidiaries of Rockstar are just merged into one company.

Luisa died for a man who didn't even love her. Plus, her sacrifice didn't exactly help towards the wellbeing of Mexico at all. Reyes ends up becoming a dictator by 1914.
Nastas was one of the only natives in Tall Trees that didn't get brainwashed by Dutch. With that accompanied, his mannerisms and way of speaking portray him as very wise. He very much has similarities to Rains Fall in this regard. It sucks that he did die since Nastas and John did share similar views about the expansion of civilization, and I wish the two had more missions together.

You are only required to study 50 animals for 100% completion.
Studying and skinning every animal in the game only really counts towards the Skin Deep and Zoologist achievements.
That trinket luckily doesn't count towards 100%. The game has a completion page with a list of everything needed for 100% completion, so give that a quick look to see what you're missing.
It could work either way with enough time, interesting characterization nonetheless.
"Happy ending" for high honor Jack is a bit of an overexaggeration.
High honor Jack is still very much in a deep depressive state still, and he would definitely struggle more than Arthur or John to have some type of meaningful end. Yet I don't see him becoming a total villain. Yes, he's certainly mentally scarred from seeing his family die. However, I don't see him becoming totally evil just yet. A high honor version of Jack still pertains to the aforementioned isolation and internal suffering.
