In Undead Nightmare, Eunis can be found as one of the survivors defending MacFarlane's Ranch from the undead hordes, where she is usually standing on the lower level of the windmill tower beside the train station. If MacFarlane's Ranch is saved and Eunis survives, she will remain on the windmill tower.
